3 slices bacon
4 c leftover mashed potatoes
2 eggs
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1 c shredded cheddar cheese
Cook bacon in skillet. Crumble and set aside. Keep grease.
Mix mashed potatoes, eggs, onion powder, salt and pepper. Stir in crumbled bacon and cheese.
Make 8 patties.
Heat bacon drippings over medium heat and fry patties until crisp (4 minutes on each side).
