Mix together in a colander, rinse and drain, refrigerate at least 30 minutes. Good with scoop tortillas (best to use the multigrain ones). Mmmmm.
1 can black beans
1 can corn
1 tomato, chopped
1/3 c red onion, diced
1 or 2 tsp lime juice
1 TBS olive oil
2 TBS cilantro
salt and pepper
1 medium avocado, diced
(optional: 1 diced jalapeno)
Makes 13 (1/2 c) servings - 80 calories
