Boil baby red potatoes until fork tender.
Preheat oven to 450 degrees.
Drizzle olive oil on baking sheet.
Set potatoes on baking sheet and smash each one down with a masher or fork.
Drizzle with more olive oil. Season with salt and pepper.
You can also use herbs and garlic.
Top with grated Parmesan cheese.
Bake for 20 minutes. Should be crispy on the outside and soft on the inside.
