Brunswick Stew
WARNING - THIS MAKES ABOUT TWO GALLONS. But it's good and pretty easy.
Put all this in a BIG POT (I had to use my water bath canner):
About 4 chicken breasts, cooked in crock pot, shredded, then covered with barbeque sauce
About 1 pound pork (I used some of a pork loin), cooked in crock pot, shredded, then covered with barbeque sauce
About 4 large potatoes, peeled and cut into chunks
10 oz pkg frozen lima beans
16 oz pkg frozen whole kernel corn
1 tube frozen creamed corn
28 oz can tomatoes
Cook in skillet for a few minutes with butter and add: 1 onion, 4 celery ribs, and 2 carrots (cut up)
Season with salt and pepper, hot sauce, catsup, barbeque sauce, Worcestershire sauce, possibly a little sugar.
Heat to boiling and then simmer until potatoes are tender.

Honey Maple BBQ Ribs (Crock Pot)
3 lbs baby back pork rib rack
salt
pepper
1/3 c honey
3 TBS mustard
1/4 c maple syrup
1 c honey BBQ sauce
More BBQ sauce (for after ribs are cooked)
Season ribs with salt and pepper.
Place ribs in slow cooker (meaty side should face outer side of slow cooker). Make it curve with the wall of the slow cooker.
In medium bowl, combine honey, mustard, maple syrup and BBQ sauce, and stir.
Use pastry brush, and spread rib rack with BBQ mixture.
Cook on low for 6 to 8 hours, until done and tender.
Remove and spread on extra BBQ sauce.

Mississippi Sin Dip
24 oz cream cheese, softened
1/2 c mayonnaise
8 oz chopped green chilis
2 c cheddar cheese
16 oz sour cream
12 oz deli honey ham, very finely chopped
Preheat oven to 250.
Mix all ingredients together.
Bake for 30 minutes, until hot and bubbly.
Serve with corn chips or crackers.

Biscuits and Gravy Casserole
Ingredients:
1 can flaky biscuits (Grands is what I used)...
1/2 lb ground breakfast sausage
3 tbsp flour
1/2 tsp salt
1 tsp black ground pepper
2 1/2 cups milk
Directions:
Spray a small casserole dish with cooking spray. I used a 7×10.
Slice biscuits into quarters. Layer half the biscuits in the bottom of the casserole dish.
Bake in a preheated oven, 400, for about 10 minutes.
While biscuits are cooking, cook the breakfast sausage in a pan over medium heat. Cook until no longer pink.
Drain fat and sprinkle the flour on top of meat.
Stir until the flour is completely absorbed.
Add the milk, salt, and pepper, and stir until combined.
Allow mixture to come to a slow boil. Add more seasonings if desired. You want the gravy to be thick, but not too thick, so add a bit more milk if needed.
Pour gravy over cooked biscuits and layer remaining biscuit dough on top.
Place dish into the oven and bake for about 25 minutes, or until golden brown.
Serve warm!!

Coca Cola Pork Chops
4 pack of boneless or bone-in pork chops
1 tbs. oil
1 cup Coca Cola
1 cups of Ketchup
Salt and Pepper to taste
Directions:
1. Using a skillet (or your stove) brown both sides of pork chops in oil, salt and Pepper them to taste
2. Mix together coca cola and ketchup.
3. Pour your mixture into the skillet and cover your chops.
4. Cook them in your skillet covered with the lid over medium for about 10 minutes or until fully cooked (will depend on thickness.)
5. If sauce is too thin, remove chops and set aside, then reduce sauce to desired thickness.
6. Serve sauce over pork chops

Pork Chop Casserole (Cracker Barrel)
I wish I'd taken a picture of this one ... it's good. It just takes a long time to cook.
4 - 6 boneless pork chops
4 potatoes, cut and sliced VERY THIN
1 onion, cut and sliced thin
1 can cream of mushroom soup
1 can cheddar cheese soup
grated cheese
Spray casserole dish.
Layer pork chops in dish.
Layer potatoes on top of pork chops.
Layer onion on top of potatoes.
Mix soups together and pour on top.
Bake at 350 for about an hour, maybe more. The potatoes should be almost tender.

Garlic Ham and Cheese Biscuits
1 can biscuits
8 slices ham
8 slices cheese
4 TBS butter, melted
1/4 tsp garlic powder
Preheat oven to 350.
Open can of biscuits and cut in half.
Add slice of ham and slice of cheese. Put tops back on biscuits.
Bake 15 minutes
Melt butter, add garlic, and brush on top of biscuits.

Honey Pork Chops (or Chicken) (Wanda P.)
6-9 pork chops, not too thick, good to use cut-up pork loin
2 eggs
4 TBS water
2 c flour
1 tsp salt
1 tsp pepper
1 tsp garlic powder
canola or vegetable oil for frying
Glaze:
1-1/2 c honey
1/2 c brown sugar
1/2 tsp ginger
ash cayenne pepper
1/2 c soy sauce
1 TBS chopped garlic
2 TBS butter
Whisk eggs and water in shallow dish.
Mix flour, salt, pepper and garlic powder in another dish.
Dip chops in flour, then into egg, then back into flour.
Be sure to get plenty of flour on the last dipping.
Shake them a little and place them in skillet in hot oil.
Fry 6 minutes on each side.
Remove from skillet and place in 9x13 baking dish.
To make glaze, saute garlic in butter.
Add honey, soy sauce, brown sugar, pepper and ginger.
Bring to boil and reduce to low. Simmer 5 minutes. Watch to make sure it doesn't boil over.
Pour 1/2 glaze over pork chops.
Flip them ove rand pour other 1/2 over other ide.
Bake in preheated 350 oven, uncovered, for 20-25 minutes. Will set glaze and finish cooking.
Also works with chicken.

Chili Mac (Hamburger and Sausage)
1/2 TBS cooking oil
1-1/2 c chopped onion
1/2 c chopped bell pepper
1 or 2 jalapenos, chopped
1 lb hamburger
1 lb sausage
1 TBS minced garlic
2-1/2 TBS chili powder
1/2 tsp cumin
1/4 tsp oregano
salt and pepper
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 (7 oz) can green chilis
2 c water
1 (15.5 oz) can pinto or red kidney beans, drained
1-1/2 c pasta (elbow or shells)
1 c shredded cheddar cheese, divided
toppings (green onions, diced tomatoes, sour cream)
Heat oil in large skillet.
Add onion and peppers and cook 4 minutes.
Add hamburger, sauce and garlic. Cook until no longer pink.
Drain off fat.
Stir in chili powder, cumin, oregano, salt and pepper.
Add diced tomatoes, tomato sauce and green chilis, and stir.
Add water, beans, pasta and half of cheese.
Bring to a boil, cover and reduce heat to simmer.
Simmer 20 minutes or until pasta is cooked.
Uncover, stir and let simmer until reduced to desired consistency.
Sprinkle more cheese on top, cover and cook over low until melted.
Garnish with toppings.

ham (2 ham steaks or other kind of ham)
8-10 medium potatoes, peeled and thinly sliced
2 onions, diced
2 c grated cheddar cheese
1 can cream of mushroom soup
Layer potatoes, onion and ham in crockpot, making two layers of each.
Top with cream of mushroom soup.
Cook on low 8 hours.
Add cheddar cheese at the end and let melt.
8-10 medium potatoes, peeled and thinly sliced

2 c grated cheddar cheese

Dinner in a Crockpot (Cathy P.)
Layer in a crock pot:
Steak or pork chops or chicken (thick)
Cover with A1 or Heinz 57
Cover with layer of foil
Add foil-wrapped potatoes
Add foil-wrapped frozen corn cobs
Cook on low for 6 hours

Best Pork Loin Ever
1 pork tenderloin (2 to 2.5 lbs)
4 garlic cloves, quartered/sliced/slivered
1/4 c soy sauce
2 TBS dijon mustard
4 TBS honey
2 TBS orange juice
1 TBS rosemary
pepper
3 TBS olive oil
Preheat oven to 350 degrees.
Rinse and pay dry tenderloin.
Use a paring knife and poke holes on top of tenderloin, about 1" deep.
Place a garlic piece in each hole.
Whisk rest of the ingredients, except olive oil.
Slowly drizzle in olive oil while whisking.
Pour over tenderloin.
Roast in oven 45 to 50 minutes until well cooked.
Allow to rest for 10 minutes. Cut into 2-inch slices.

Chicken Cordon Bleu Casserole (Pamela D.)
1 (6 oz) pkg chicken flavored stuffing mix
1 (10-3/4 oz) can cream of chicken soup
1 TBS Dijon mustard
3-4 chicken breasts, cooked and cut into pieces
3 c brocolli florets
2 c ham, chopped
6 slices extra thin Swiss cheese
Preheat oven to 375 degrees.
Prepare stuffing as directed.
Mix soup and mustard in bowl.
Stir in chicken, broccoli and ham.
Spoon into 2-quart casserole dish (sprayed).
Top with cheese slices and stuffing.
Bake 35 to 40 minutes.

Ham and Cheese Biscuit Cups (Laurie W.)
1 tube refrigerator biscuits
1/2 c cheese
1/2 c ham, cut into small pieces
2 - 3 eggs, beaten
salt and pepper
cooking spray
muffin tin
Grease muffin tin.
Preheat oven to 375 degrees.
Press biscuits flat with your hands into muffin tin.
Fill biscuit cups with ham and cheese.
Cover with beaten eggs.
Salt and pepper.
Bake 20 - 25 minutes until eggs are set and biscuits are brown.

Crockpot Ranch Pork Chops (Billy S.)
boneless pork chops
1 can cream of chicken soup
1 pkt dry Ranch dressing mix
In crockpot, layer pork chops, add cream of chicken soup, then cover with Ranch dressing mix.
Cover and cook on low for 6 hours.

Crockpot Pork Chops (WW Recipe)
6 pork chops, 1 inch thick
1 packet Ranch dressing seasoning
10 oz can 98% FF cream of chicken soup
Place pork chops in crockpot and cover with soup and Ranch seasoning. Cook on low for at least 6 hours.
Another variation - instead of using Ranch seasoning, use 98% FF cream of mushroom soup, along with the cream of chicken soup.

1 can cheddar cheese soup
4 to 6 pork chops

onion, sliced
Preheat oven to 350 degrees.
Spray baking dish.
Place pork chops in dish.
Cover with potatoes and onion.
Mix soups and cover the potatoes with soup mixture.
Bake for 1 hour.
Can add cheese towards the end of baking to make it better.
