Oven Roasted Smoked Sausage and Potatoes (Real Good)

1 pkg smoked sausage, sliced into rounds
1 large onion, peeled and sliced
5 large potatoes, peeled and chopped into 1/2 inch cubes
olive oil
shredded cheese

Preheat oven to 400 degrees.
Line large baking tray (with sides) with foil. Spray with cooking spray.
Put sausage rounds, onion and potatoes in large bowl. Drizzle with a couple TBS of olive oil and seasonings. Toss together with your hands until evenly distributed. Pour onto baking gray and spread out evenly.
Roast 45 minutes or more, stirring every 15 minutes or so, until potatoes are tender. Turn off oven.
Scatter cheese over top and bake a few more minutes to melt cheese.
