Alice Springs Chicken (Outback Recipe)

4 boneless skinless chicken breasts, pounded to 1/2 inch thickness
Lowry's seasoning salt
6 bacon slices
1/4 c regular mustard
1/3 c honey
2 TBS mayonnaise
2 tsp dried onion flakes
1 c sliced mushrooms (optional)
2 c shredded Colby/Jack cheese

Sprinkle and rub chicken with seasoning salt. Cover and refrigerate 30 minutes.
Cook bacon until crisp. Remove and set aside. (Keep grease.)
Saute chicken in bacon grease for 3 to 5 minutes per side.
Place chicken in 9x13 casserole dish.
Make honey mustard (mustard, honey, mayonnaise, onion flakes).
Spread honey mustard over chicken pieces.
Layer with mushrooms (optional), crumbled bacon and shredded cheese.
Bake at 350 degrees for 30 minutes.
Serve with left-over honey mustard sauce.
