1/4 c butter
2/3 c milk
1 pkg taco seasoning
2-1/2 c mashed potato flakes
1 lb ground beef
1/2 c chopped onion
1/2 c barbeque sauce
1 c shredded lettuce
1 medium tomato, chopped
1 c sharp cheddar cheese, shredded
sour cream, optional
Preheat oven to 350 degrees.
In medium sauce pan, melt better.
Add milk and 2 TBS of taco seasoning mix.
Remove from heat and stir in potato flakes until incorporated.
Press mixture over bottom and sides of pie plate (or bottom of 10" pan).
In medium skillet, cook and beef and onions until done. Drain fat.
Stir in remaining taco seasoning and barbeque sauce.
Cook until bubbly.
Pour into prepared potato crust.
Bake uncovered 30-to-35 minutes. Let cool for 5 minutes.
Top with cheese, lettuce and tomatoes.
Cut and serve with sour cream.
