8-10 medium potatoes, peeled and cut into 1/2 inch cubes
1 can cream of mushroom soup
1-1/4 c milk
1 envelope ranch dressing mix
1-1/2 c shredded cheddar cheese, divided
salt and pepper
6 slices bacon, cooked and crumbled
Boil potatoes 10-to-12 minutes until almost tender. Drain.
Place potatoes into 9x12 greased baking dish.
In a bowl, mix soup, milk, ranch dressing mix, 1 cup cheese, salt and pepper.
Pour over potatoes.
Sprinkle crumbled bacon and remaining cheese on top.
Bake uncovered at 350 degrees 25-to-30 minutes.
