German Chocolate Cookies (for my Johnny)




















2 boxes german chocolate cake mix (dry)
4 eggs
10 TBS butter, melted

Frosting:
1 c evaporated milk
1 c sugar
3 egg yolks
1/2 c butter
1 tsp vanilla
1-1/3 c sweetened coconut
1 c chopped pecans
4 oz melted chocolate candy for drizzle

Combine cake mix, eggs and melted butter in large mixing bowl and beat until well mixed.
Batter will be sticky and thick.
Roll into one-inch balls and place on lightly greased cookie sheet (or parchment paper) - 12 balls at a time.
Bake at 350 for 8 minutes - do not overcook. Let cool completely.

Make frosting:
Add evaporated milk, sugar, egg yolks, butter and vanilla to large pan and lace on stovetop over medium heat. Stir to evenly combine and continue stirring until thickened (about 12 minutes).
Once thickened, remove from heat and add coconut and pecans.
Beat until thick enough to spread.
Spread over cooled cookies.
Drizzle with melted chocolate and let set up.
