Sweet Potato Pie (Trisha Yearwood)


1-1/2 c canned sweet potatoes (or 2-to-3 peeled and cooked sweet potatoes)
3/4 c sugar
2 large eggs
4 TBS (1/2 stick) butter, softened
1/4 c milk
1 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp nutmeg
pinch salt
1 9-inch pie shell

Preheat oven to 300 degrees.
With electric mixer, combine sweet potatoes and 1/2 c of the sugar.
Add eggs, butter, milk, vanilla, cinnamon, nutmeg and salt.
Beat until thoroughly blended and smooth.
Pour into pie shell and sprinkle with remaining 1/4 c sugar.
Bake about an hour. Cool.
