Taco Casserole

1 lb ground beef
1 packet taco seasoning
3/4 c water
1 can (16 oz) diced tomatoes
1 can (16 oz) pinto beans, drained and rinsed
2 c tortilla chips
1 c shredded cheese, melted in microwave
4 green onions
1 red bell pepper, diced
1 c lettuce, chopped

Cook ground beef in skillet, drain.
Add taco seasoning and water. Cook 5 minutes.
Add diced tomatoes. Bring to boil. Reduce heat, cover and simmer 10 minutes, stirring occasionally.
Add pinto beans. Cook uncovered 5-to-10 minutes until liquid is reduced.
Place broken tortilla chips in 2 qt casserole.
Top with beef mixture.
Sprinkle with melted cheese.
Top with lettuce, green onions, and red bell pepper.
