Hawaiian Muffins (Pineapple, Bananas, Coconut)


















3/4 c all purpose flour
3/4 c whole wheat flour
3/4 tsp baking soda
1/2 tsp salt
1-1/2 tsp cinnamon
6 TBS butter
1-1/2 tsp vanilla
2/3 c sugar
1 large egg
3 very ripe bananas
1/2 c crushed pineapple, drained
3/4 c shredded coconut (plus more for sprinkling on top)

Preheat oven to 350.

Whisk together flour, baking soda, salt, and cinnamon. Set aside.
Whisk egg, sugar and vanilla in large bowl until well combined.
Add melted butter and mix well.
Smash bananas and add to batter.
Add pineapple and coconut, stir until combined.
Combine wet and dry ingredients. Stir until combined.
Divide batter evenly into muffin tins. Sprinkle each with coconut.
Bake 18-to-20 minutes.
Let cool on rack.
