Pecan Pie Cupcakes (Kristen B.)

 














1 c chopped pecans
1/2 c all-purpose flour
1 c packed brown sugar
2/3 c butter, melted
2 eggs

Preheat oven to 350 degrees.
Combine all ingredients and mix well.
Spray mini-muffin tin with cooking spray (kind with flour works best).
Fill each 3/4 full.
Bake for 18 minutes.
Let cook for one minute (no longer), then flip out onto rack.
